2 for Thanksgiving dinner

This is the first time that Bill and I have ever had Thanksgiving with just the 2 of us, and we'll be doing it at the cabin. Bill will probably hunt in the morning and in the evening on Thanksgiving. I am planning on dinner at 1:00pm, which is what I plan for when we have a house full. My Mom always had dinner early so that everyone could watch football and have sandwiches later.

Here is our menu:
4 lb. turkey breast
Mashed potatoes
Dressing
Gravy
Corn
Pumpkin and Cream Cheese Muffins

What are you having for Thanksgiving dinner? How about leftovers? You could help me change my mind....

For leftovers, I'm currently planning on either Turkey Pot Pie or Turkey Shepherd's Pie. And, of course, turkey sandwiches. For drop in company, I plan on making a Maple Pumpkin Pie that Alicia from over at Waiting for Vermont is going to send me. I decided on muffins for Bill and I because I can freeze the rest to have for breakfasts.

Hi Denise,

Here is the recipe. I thought I would leave it in your comments so anyone could grab it and give it a try.

Pumpkin Maple Pie Supreme
Ingredients:
1 1/2 C canned pumpkin
1/2C packed brown sugar
1 1/4 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp ground cloves
1/8 tsp ground allspice
1/2 tsp salt
2/3C real maple syrup
1 1/4C evaporated milk
1 tsp all-purpose flour
3 eggs
1 (9 inch) unbaked pie shell

1) Preheat oven to 350 degrees.

2)In a large bowl, mix together pumpkin, brown sugar, cinnamon, ginger, nutmeg, cloves, allspice and salt.

3)Stir in maple syrup, evaporated milk and flour. Mix in eggs, one at a time. Make sure everything is super smooth!

4) por filling into unbaked pie shell. Bake for one hour and 10 minutes, or until center is set.

5) Remove from oven and allow to cool completely on a wire rack. When completely cooled, pie should be refrigerated for at least 2 hours before serving.

Denise - it sounds like a cozy Thanksgiving - you have a great menu! Tell Bill good luck hunting. I know Greg wants to give it another shot (literally - ha,ha!)
My inlaws are hosting us at their cabin. I am making garlic, cheddar mashed potatoes and green bean casserole.
My mom makes a nice Turkey Tetrazini w/ the leftovers. I'll have to get her recipe. Glad Alicia shared her maple pumpkin pie recipe - sounds yummy!

Shelley - I love the variety of dishes that you get when there are plenty of people for dinner. I have never had Turkey Tetrazini, need to hunt up one of those recipes...

Denise, What a wonderful opportunity--having Thanksgiving with your Honey at your log cabin!!! Wow---life doesn't get any better!!!!

Since we will be having dinner with George's family, we always have our own (just the two of us) dinner on Friday. We'll have turkey breast (we both like white meat), dressing, gravy, pimiento beans (my mom's recipe), sweet potatoes, cranberry relish, rolls, iced tea, and of course, 'punkin' pie!!!!! (Love the sound of your muffins though!)

Thanks Betsy, I haven't made them yet, but one of hubby's friends wives made them. According to the directions, the recipe is a specialty of Second Creek Farm B&B in Owensville, MO. I'll try it before I post the recipe... Pimento beans, now you have me curious.

Your menu looks yummy, especially that pie! Thanks to Alex and Alicia for leaving the recipe, I will be trying that. Thanksgiving dinner for me will be at my daughter's where she will (at last count,..!) have 24 at the table. Part of me longs for a more quiet time, but this is her special gift. She invites family, friends and others in community who might be alone. I'm making all the rolls and will do the gravy. Happy Thanksgiving to all!

Pumpkin and cheese muffins sound wonderful! Our family does a "dutch rusk custard pie". I'll have to do a post on our family pie sometime.

Jessica, what is a dutch rusk custard pie??? Is it an old German recipe(Penna Dutch)? I'm going to google...or call my Grandma...

Denise's Mom, G'ma & 2 guests are having: 17 lb turkey, bread dressing, mashed potatoes, gravy, sweet potato caserole, cranberry mold, green beans w/pearl onions, rhutabaga, noodles and pumpkin pie,(I'm going to have to try Alicias pie, sounds yummy)Hi adopted daughter, Shelly, hope to meet you someday.

First things first. YAY Bucks! As in Ohio State! :D

Thanksgiving is me my husband and our son. We use to always have to work the day after Thanksgiving and with family all out of town we always stayed home. Now it is just the tradition.

Turkey, mashed potatoes, gravy, sweet potatoes, green beans, rolls.
Pumpkin pie for hubby and my son and I will eat Holy Cow Cake!
I think that cake has 980 calories and 35 grams of fat per piece!

Dutch Ruck is a dry toast that you buy in the bread/cracker isle. Not many stores carry it. It's also called Holland Rusk. I never knew what it was until I married into my husbands family. It is their special occasion family pie.

I'm hopefully going to make one in the next few days. I'll post photos and the recipe. You use the rusk for the crust and topping. It's so yummy!

Rhutabaga is a root vegetable, I don't think any way it could be fixed, would I like it, but our guests are bringing it, so I will at least taste it.

Have a happy Thanksgiving Denise - Wayne and I get to have two Thanksgivings. The first is our Canadian Thanksgiving in October. For our US Thanksgiving we are heading back to my Mom's to share it with her. There's only the three of us, but it is hard not to do a turkey. I found a small one on my last trip south and have it waiting. Our meal will be much like your except substitute peas for corn. I love to mix my mashed potatoes and peas together - a holiday tradition since my childhood. My favourite leftover is hot turkey sandwiches - then the carcass gets stewed for soups. Somehow we get it all eaten. -- Margy

Well everyones recipes have made me hungry. Can't wait for
Denise to cook all of them. Not all this weekend of course unless she wanted to :).

4 days at the cabin together, I don't know it could be great or divorce court by Sunday. Just kidding of course. I can't wait to get going. We will be leaving right after Denise gets home fom work. Already have my truck packed. Just need to load up the wife and dogs and hit the road.

I'm a little late, but I make a Turkey Shepherd's pie with leftovers, but I like to mix sweet potato and white for the topping. I have a DETAILED from scratch recipe on Allrecipes.com - Sweet Potato and Turkey Shepherd's Pie - but basically you can do it with leftovers: saute chopped onions, mushrooms if you like in a pan; add finely chopped turkey, a little stock and or gravy; put that in the bottom of a casserole. Top with either leftover or dry stuffing mix; a layer of mixed veggies (I use frozen corn, carrots, peas) To make the topping, blend together leftover (warmed up) sweet potatoes, mashed potatoes, a dollop of sour cream and an egg or egg sub. Top the casserole with that and bake at 350 for about 40-45 minutes.

Thank you for stopping in ChristineM. I did make a small Turkey Shepherds Pie, and it came out really nice. My husband then proceeded to stir it all up with a spoon....sigh.
